Ingredients
  

For the Steak and Potatoes

  • 1 1/2 pounds sirloin steak ribeye, or New York strip, cut into bite-size pieces
  • 1 1/2 pounds baby potatoes halved or quartered
  • 3 tablespoons olive oil divided
  • 1 teaspoon salt divided
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 3 tablespoons unsalted butter
  • 4 garlic cloves minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon fresh thyme leaves optional
  • 1 tablespoon lemon juice optional

Instructions
 

Step 1: Prep the potatoes

  • Wash the baby potatoes and cut them into halves or quarters, depending on their size. Smaller pieces cook faster and brown better.

Step 2: Season the steak

  • Pat the steak pieces dry with paper towels. Add them to a bowl with 1 tablespoon olive oil, 1/2 teaspoon salt, black pepper, garlic powder, smoked paprika, and onion powder. Toss until coated.

Step 3: Cook the potatoes

  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the potatoes cut-side down. Cook for 12 to 15 minutes, stirring occasionally, until they are golden and fork-tender. Season with the remaining 1/2 teaspoon salt.

Step 4: Remove the potatoes

  • Transfer the cooked potatoes to a plate and set them aside. Keep the skillet on the stove.

Step 5: Sear the steak

  • Increase the heat to medium-high. Add the steak pieces in a single layer. Cook for 2 to 3 minutes per side, until browned on the outside and cooked to your liking. Work in batches if the skillet is crowded.

Step 6: Add garlic butter

  • Reduce the heat to low. Add the butter and minced garlic to the skillet. Stir for 30 to 60 seconds, just until the garlic smells fragrant.

Step 7: Bring everything together

  • Add the potatoes back to the skillet. Toss everything in the garlic butter until the steak and potatoes are well coated.

Step 8: Finish and serve

  • Sprinkle with parsley and thyme if using. Add a small squeeze of lemon juice for brightness, then serve warm.
