For the Steak and Potatoes
- 1 1/2 pounds sirloin steak ribeye, or New York strip, cut into bite-size pieces
- 1 1/2 pounds baby potatoes halved or quartered
- 3 tablespoons olive oil divided
- 1 teaspoon salt divided
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 3 tablespoons unsalted butter
- 4 garlic cloves minced
- 1 tablespoon chopped fresh parsley
- 1 teaspoon fresh thyme leaves optional
- 1 tablespoon lemon juice optional
Step 1: Prep the potatoes
