For the Chocolate Coffee Cookies

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup strong brewed coffee cooled
  • 1/2 cup buttermilk

For the Coffee Cream Filling

  • 1/2 cup unsalted butter softened
  • 4 ounces cream cheese softened
  • 2 1/2 cups powdered sugar
  • 1 tablespoon instant coffee or espresso powder
  • 1 tablespoon heavy cream or milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

Step 1: Preheat the oven

  • Preheat your oven to 350°F. Line two baking sheets with parchment paper.

Step 2: Mix the dry ingredients

  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

Step 3: Cream the butter and sugars

  • In a large bowl, beat the softened butter, brown sugar, and granulated sugar until smooth and creamy, about 2 minutes.

Step 4: Add the egg and vanilla

  • Beat in the egg and vanilla extract until fully mixed.

Step 5: Add the wet and dry ingredients

  • Add the dry ingredients in two parts, alternating with the cooled coffee and buttermilk. Mix on low speed until just combined. Do not overmix.

Step 6: Scoop the batter

  • Scoop the batter onto the prepared baking sheets, using about 1 1/2 tablespoons per cookie. Leave about 2 inches between each one.

Step 7: Bake the cookies

  • Bake for 10 to 12 minutes, or until the tops look set and spring back lightly when touched.

Step 8: Cool completely

  • Let the cookies cool on the baking sheet for 5 minutes, then move them to a cooling rack. Cool completely before filling.

Step 9: Make the coffee filling

  • In a large bowl, beat the butter and cream cheese until smooth. In a small cup, stir the instant coffee with the cream or milk until dissolved. Add this mixture to the bowl with powdered sugar, vanilla, and a pinch of salt. Beat until fluffy.

Step 10: Assemble the whoopie pies

  • Spread or pipe the coffee filling onto the flat side of half the cookies. Top with the remaining cookies and press gently to make sandwiches.
