- 1/2 cup heavy cream or half-and-half
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes optional
- 1/2 teaspoon salt plus more for pasta water

- 2 cups shredded mozzarella cheese divided
