For the Salad
- 6 cups fresh baby spinach
- 2 cups fresh strawberries hulled and sliced
- 1/2 cup crumbled feta cheese or goat cheese
- 1/3 cup chopped pecans walnuts, or sliced almonds
- 1/4 cup thinly sliced red onion
- 1/2 avocado diced, optional
For the Balsamic Dressing
- 3 tablespoons olive oil
- 1 1/2 tablespoons balsamic vinegar
- 1 teaspoon honey or maple syrup
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Step 1: Prepare the Produce
Wash and dry the spinach well. If the spinach is wet, the dressing will not coat the leaves nicely.
Hull and slice the strawberries. Thinly slice the red onion and dice the avocado if using.
Step 2: Make the Dressing
In a small bowl or jar, combine olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
