For the Pulled Pork
- 3 pounds boneless pork shoulder or pork butt
- 1 tablespoon brown sugar
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 1 tablespoon yellow mustard
- 1 small yellow onion sliced
- 3/4 cup chicken broth or apple juice
- 1 1/2 cups BBQ sauce plus more for serving
- 1 tablespoon apple cider vinegar
- 1 tablespoon Worcestershire sauce
For the Sandwiches
- 8 sandwich buns or brioche buns
- 1 cup coleslaw optional
- Pickle slices optional
- Extra BBQ sauce for serving
Step 1: Season the Pork
Pat the pork dry with paper towels. In a small bowl, mix the brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, and chili powder.
Rub the yellow mustard over the pork, then coat it with the seasoning mixture on all sides.
Step 2: Add Ingredients to the Slow Cooker
Place the sliced onion in the bottom of the slow cooker. Set the seasoned pork on top.
Pour in the chicken broth or apple juice. Add the BBQ sauce, apple cider vinegar, and Worcestershire sauce around the pork.
Step 3: Cook Until Tender
Cover and cook on low for 8 hours, or on high for 4 to 5 hours. The pork is ready when it is very tender and pulls apart easily with a fork.
For the best texture, low heat is the better choice if you have the time.
Step 5: Mix with Sauce
Skim extra fat from the liquid in the slow cooker if needed. Return the shredded pork to the slow cooker and stir it into the sauce.
