Ingredients
  

For the Foil Packets

  • 1 pound large raw shrimp peeled and deveined
  • 12 ounces smoked sausage sliced into rounds
  • 1 pound baby potatoes halved
  • 2 ears corn cut into small pieces
  • 2 tablespoons olive oil
  • 4 tablespoons butter melted
  • 3 cloves garlic minced
  • 1 tablespoon Old Bay seasoning or Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt or to taste
  • 1 tablespoon lemon juice

For Serving

  • 1 lemon cut into wedges
  • 2 tablespoons chopped fresh parsley optional
  • Extra melted butter optional

Instructions
 

Step 1: Preheat the grill or oven

  • Preheat your grill to medium-high heat, about 400°F. If using the oven, preheat it to 400°F and place a baking sheet nearby.

Step 2: Parboil the potatoes and corn

  • Bring a large pot of water to a boil. Add the halved baby potatoes and cook for 8 minutes. Add the corn pieces during the last 3 minutes. Drain well.

Step 3: Make the butter mixture

  • In a large bowl, stir together the melted butter, olive oil, garlic, Old Bay seasoning, paprika, black pepper, salt, and lemon juice.

Step 4: Add the main ingredients

  • Add the shrimp, sausage, potatoes, and corn to the bowl. Toss gently until everything is coated in the seasoned butter mixture.

Step 5: Prepare the foil

  • Tear off 4 large sheets of heavy-duty foil. Divide the shrimp mixture evenly between the foil sheets.

Step 6: Seal the packets

  • Fold the foil over the filling and crimp the edges tightly to seal. Leave a little space inside each packet so the heat can circulate.

Step 7: Cook the packets

  • Place the packets on the grill or on a baking sheet in the oven. Cook for 12 to 15 minutes, until the shrimp are pink and cooked through.

Step 8: Open carefully

  • Carefully open the packets because hot steam will escape. Check that the shrimp are fully cooked and the potatoes are tender.

Step 9: Finish and serve

  • Top with parsley, lemon wedges, and extra melted butter if you like. Serve warm right from the foil or transfer to plates.
