Ingredients
  

For the Cookies

  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar packed
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar

For Rolling

  • 1/2 cup granulated sugar
  • 1 cup powdered sugar

Instructions
 

Step 1: Mix the dry ingredients

  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.

Step 2: Cream the butter and sugars

  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar until smooth and creamy.

Step 3: Add the eggs and flavoring

  • Beat in the eggs one at a time. Add the red food coloring, vanilla extract, and white vinegar. Mix until the color is even.

Step 4: Add the dry ingredients

  • Add the flour mixture to the wet mixture. Mix on low speed until just combined. The dough will be soft and slightly sticky.

Step 5: Chill the dough

  • Cover the bowl and refrigerate the dough for at least 1 hour. This helps the cookies hold their shape and makes rolling easier.

Step 6: Prepare the oven

  • Preheat the oven to 350°F. Line baking sheets with parchment paper.

Step 7: Roll the cookie dough

  • Scoop the chilled dough into 1 1/2 tablespoon-size balls. Roll each ball first in granulated sugar, then generously in powdered sugar.
