For the Popcorn
- 12 cups freshly popped plain popcorn
- 2 tablespoons vegetable oil if popping kernels on the stovetop
- 1/2 cup unpopped popcorn kernels if needed
- 1/2 teaspoon salt
For the Sugar Syrup
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/3 cup water
- 3 tablespoons unsalted butter
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract

Step 1: Prepare the popcorn
Pop the popcorn using an air popper, stovetop pot, or another preferred method.
Measure 12 cups of popped popcorn into an extra-large mixing bowl. Remove any unpopped kernels so no one bites into a hard piece.
Sprinkle the popcorn with 1/2 teaspoon of salt and toss gently.
Step 2: Prepare the work area
Line two baking sheets or a clean counter with parchment or wax paper.
Lightly coat a large spoon, spatula, and your hands with nonstick cooking spray.
Measure any sprinkles or other decorations before beginning. The syrup sets quickly, so everything should be ready before it is poured over the popcorn.
Step 3: Cook the syrup
Combine the granulated sugar, corn syrup, water, butter, and 1/4 teaspoon salt in a heavy-bottomed saucepan.
Cook over medium heat, stirring gently until the butter melts and the sugar dissolves.
Once the mixture begins boiling, stop stirring. Attach a candy thermometer to the side of the pan without letting the tip touch the bottom.
Step 4: Bring the syrup to temperature
Continue boiling the syrup until it reaches 250°F.
This usually takes 5 to 8 minutes after the mixture begins boiling, but use the thermometer rather than relying only on time.
Remove the saucepan from the heat. Carefully stir in the vanilla and optional food coloring. The mixture may bubble briefly when the vanilla is added.
Step 5: Coat the popcorn
Immediately pour the hot syrup evenly over the popcorn.
Use a greased wooden spoon or heat-resistant spatula to toss the popcorn gently until most pieces are coated.
Add sprinkles or small candies while the mixture is still sticky. Avoid adding regular chocolate pieces at this stage because the hot syrup may melt them.
Step 6: Shape the balls
Allow the coated popcorn to cool for 2 to 3 minutes, just until it can be handled safely.
Lightly grease your hands again. Scoop about 1 1/4 cups of popcorn mixture and press it gently into a ball.
Do not squeeze too firmly, or the popcorn may become dense and crushed. Place each finished ball on the prepared parchment paper.
The syrup remains very hot, so adults should handle the initial shaping. Children can help decorate the balls after they have cooled.
Step 7: Cool and serve
Let the popcorn balls cool at room temperature for about 30 minutes, until firm.
Drizzle them with melted chocolate or add extra decorations if desired.
Serve immediately or wrap each ball tightly in plastic wrap to keep it fresh.
