Ingredients
  

For the Chicken and Broccoli

  • 1 1/2 pounds boneless skinless chicken breasts cut into bite-size pieces
  • 4 cups broccoli florets
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil or avocado oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh grated ginger optional
  • 2 tablespoons water for steaming broccoli

For the Honey Sriracha Sauce

  • 1/3 cup honey
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons sriracha or more to taste
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water

For Serving

  • Cooked white rice brown rice, or noodles
  • Sesame seeds optional
  • Sliced green onions optional

Instructions
 

Step 1: Make the sauce

  • In a small bowl, whisk together honey, soy sauce, sriracha, rice vinegar, sesame oil, cornstarch, and water. Set it aside.

Step 2: Coat the chicken

  • Place the chicken pieces in a bowl. Add cornstarch, salt, and black pepper. Toss until the chicken is lightly coated.

Step 3: Cook the chicken

  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 5 to 7 minutes, turning as needed, until browned and cooked through. Remove the chicken from the skillet and set aside.

Step 4: Cook the broccoli

  • Add the remaining 1 tablespoon oil to the skillet. Add the broccoli and cook for 2 minutes, stirring often.

Step 5: Steam the broccoli

  • Add 2 tablespoons water to the skillet. Cover and cook for 2 to 3 minutes, until the broccoli is bright green and crisp-tender.

Step 6: Add garlic and ginger

  • Remove the lid. Add the garlic and ginger, if using. Stir for about 30 seconds, just until fragrant.

Step 7: Add chicken back

  • Return the cooked chicken to the skillet with the broccoli. Stir everything together.

Step 8: Add the sauce

  • Pour the honey sriracha sauce into the skillet. Stir well and cook for 2 to 3 minutes, until the sauce thickens and coats the chicken and broccoli.

Step 9: Serve

  • Remove from heat. Serve warm over rice or noodles. Top with sesame seeds and green onions if you like.
