Ingredients
  

For the Gnocchi

  • 1 pound potato gnocchi
  • 1 tablespoon salt for boiling water

For the Sausage and Sauce

  • 1 tablespoon olive oil
  • 1 pound Italian sausage mild or hot, casings removed if needed
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 cup frozen peas
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • Salt to taste
  • 1 tablespoon chopped fresh parsley optional

Instructions
 

Step 1: Boil the water

  • Bring a medium pot of salted water to a boil. Cook the gnocchi according to the package directions. Most gnocchi are done when they float to the top.

Step 2: Drain the gnocchi

  • Drain the gnocchi and set it aside. Save about 1/4 cup of the cooking water in case you need to loosen the sauce later.

Step 3: Cook the sausage

  • Heat olive oil in a large skillet over medium heat. Add the sausage and cook for 6 to 8 minutes, breaking it into small pieces, until browned and cooked through.

Step 4: Add onion and garlic

  • Add the diced onion to the skillet and cook for 3 to 4 minutes, until softened. Stir in the garlic and cook for 30 seconds.

Step 5: Add peas and broth

  • Stir in the frozen peas and chicken broth. Let it simmer for 2 to 3 minutes, until the peas are warmed through.

Step 6: Make it creamy

  • Reduce the heat to low. Stir in the heavy cream, Parmesan cheese, Italian seasoning, black pepper, and red pepper flakes if using.

Step 7: Add the gnocchi

  • Add the cooked gnocchi to the skillet and gently toss until coated in the sauce. If the sauce feels too thick, add a splash of reserved gnocchi water.

Step 8: Taste and serve

  • Taste and add salt if needed. Sprinkle with fresh parsley and extra Parmesan, then serve warm.
