For the Chicken and Zucchini

  • 1 1/2 pounds boneless skinless chicken breasts, cut into bite-size pieces
  • 2 medium zucchini sliced into half-moons
  • 2 tablespoons olive oil divided
  • 3 tablespoons unsalted butter
  • 4 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley optional

Instructions
 

Step 1: Prepare the chicken

  • Pat the chicken pieces dry with a paper towel. Add them to a bowl with Italian seasoning, paprika, salt, and black pepper. Toss until the chicken is evenly coated.

Step 2: Cook the chicken

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken in a single layer. Cook for 6 to 8 minutes, turning occasionally, until golden and cooked through. The internal temperature should reach 165°F. Transfer the chicken to a plate.

Step 3: Cook the zucchini

  • Add the remaining 1 tablespoon olive oil to the same skillet. Add the sliced zucchini and cook for 3 to 4 minutes, stirring occasionally. Keep it slightly firm so it does not turn mushy.

Step 4: Add garlic butter

  • Lower the heat to medium. Add butter, minced garlic, and red pepper flakes if using. Stir for about 30 seconds, just until the garlic smells fragrant.

Step 5: Combine everything

  • Return the cooked chicken to the skillet. Stir everything together so the chicken and zucchini get coated in the garlic butter sauce.

Step 6: Finish with lemon

  • Add fresh lemon juice and stir again. Taste and add a little more salt or pepper if needed.

Step 7: Serve warm

  • Sprinkle with fresh parsley and Parmesan cheese if you like. Serve right away while the chicken is juicy and the zucchini is tender.
