Ingredients
  

For the Grilled Chicken

  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Chipotle Ranch Sauce
  • 1/2 cup ranch dressing
  • 1 tablespoon chipotle peppers in adobo sauce finely chopped
  • 1 teaspoon lime juice
  • 1/2 teaspoon honey optional
  • 1 tablespoon water if needed to thin

For the Burritos

  • 4 large flour tortillas burrito size
  • 2 cups cooked white rice or cilantro lime rice
  • 1 cup black beans drained and rinsed
  • 1 cup shredded cheddar Monterey Jack, or Mexican blend cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes or pico de gallo
  • 1/2 cup corn optional
  • 1/4 cup chopped cilantro optional

Instructions
 

  • Step 1: Season the chicken
  • Place the chicken in a bowl. Add olive oil, lime juice, chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper. Rub the seasoning over both sides of the chicken.

Step 2: Grill the chicken

  • Heat a grill, grill pan, or skillet over medium-high heat. Cook the chicken for 5 to 7 minutes per side, or until the inside reaches 165°F. Let it rest for 5 minutes, then slice it into thin strips.

Step 3: Make the chipotle ranch sauce

  • In a small bowl, stir together ranch dressing, chopped chipotle peppers, lime juice, and honey if using. Add a little water if you want a thinner sauce.

Step 4: Warm the tortillas

  • Warm the flour tortillas in a dry skillet for about 15 to 20 seconds per side. This makes them softer and easier to roll.

Step 5: Add the fillings

  • Lay one tortilla flat. Add rice, black beans, grilled chicken, cheese, lettuce, tomatoes, corn, cilantro, and a spoonful of chipotle ranch sauce. Keep the filling near the center so it is easier to wrap.

Step 6: Roll the burrito

  • Fold in the sides of the tortilla, then roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.

Step 7: Toast if desired

  • Place the burrito seam-side down in a warm skillet for 1 to 2 minutes per side until lightly golden. This helps seal the burrito and gives it a better texture.
