For the Grilled Chicken
- 1 pound boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For the Chipotle Ranch Sauce
- 1/2 cup ranch dressing
- 1 tablespoon chipotle peppers in adobo sauce finely chopped
- 1 teaspoon lime juice
- 1/2 teaspoon honey optional
- 1 tablespoon water if needed to thin
For the Burritos
- 4 large flour tortillas burrito size
- 2 cups cooked white rice or cilantro lime rice
- 1 cup black beans drained and rinsed
- 1 cup shredded cheddar Monterey Jack, or Mexican blend cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes or pico de gallo
- 1/2 cup corn optional
- 1/4 cup chopped cilantro optional
Step 1: Season the chicken
Place the chicken in a bowl. Add olive oil, lime juice, chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper. Rub the seasoning over both sides of the chicken.
Step 2: Grill the chicken
Heat a grill, grill pan, or skillet over medium-high heat. Cook the chicken for 5 to 7 minutes per side, or until the inside reaches 165°F. Let it rest for 5 minutes, then slice it into thin strips.
Step 3: Make the chipotle ranch sauce
In a small bowl, stir together ranch dressing, chopped chipotle peppers, lime juice, and honey if using. Add a little water if you want a thinner sauce.
Step 4: Warm the tortillas
Step 5: Add the fillings
Lay one tortilla flat. Add rice, black beans, grilled chicken, cheese, lettuce, tomatoes, corn, cilantro, and a spoonful of chipotle ranch sauce. Keep the filling near the center so it is easier to wrap.
