Ingredients
  

For the Casserole

  • 1 large loaf brioche challah, or French bread, cut into 1-inch cubes
  • 8 ounces cream cheese softened and cut into small cubes
  • 5 large eggs
  • 1 3/4 cups whole milk
  • 1/2 cup heavy cream
  • 1/3 cup brown sugar packed
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

For the Apple Filling

  • 3 medium apples peeled and diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt

For Topping

  • 1/3 cup caramel sauce plus more for serving
  • 2 tablespoons chopped pecans or walnuts optional
  • Powdered sugar optional

Instructions
 

Step 1: Prepare the baking dish

  • Grease a 9×13-inch baking dish with butter or nonstick cooking spray.

Step 2: Cook the apples

  • Melt the butter in a medium skillet over medium heat. Add the diced apples, brown sugar, cinnamon, lemon juice, and salt.

Step 3: Soften the apples

  • Cook the apples for 5 to 7 minutes, stirring often, until they begin to soften. Remove from the heat and let them cool slightly.

Step 4: Add the first bread layer

  • Place half of the bread cubes into the prepared baking dish.

Step 5: Add the filling

  • Scatter the cream cheese cubes over the bread. Spoon the cooked apples evenly over the cream cheese.

Step 6: Add more bread

  • Top with the remaining bread cubes, spreading them into an even layer.

Step 7: Make the custard

  • In a large bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth.

Step 8: Pour over the bread

  • Slowly pour the custard mixture over the bread. Press the bread down gently with a spoon so it soaks up the liquid.

Step 9: Chill the casserole

  • Cover the baking dish tightly with foil or plastic wrap. Refrigerate for at least 2 hours, or overnight for the best texture.

Step 10: Preheat the oven

  • When ready to bake, preheat your oven to 350°F. Let the casserole sit at room temperature for 20 minutes while the oven heats.

Step 11: Bake covered

  • Cover with foil and bake for 25 minutes.

Step 12: Bake uncovered

  • Remove the foil and bake for another 18 to 22 minutes, until the top is golden and the center is set.

Step 13: Add caramel

  • Drizzle caramel sauce over the warm casserole. Add chopped pecans or walnuts if using.

Step 14: Rest and serve

  • Let the casserole rest for 10 minutes before slicing. Serve warm with extra caramel sauce if desired.
