Ingredients
  

For the Casserole

  • 1 medium green cabbage chopped, about 8 cups
  • 8 slices bacon chopped
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried thyme optional

For the Topping

  • 1/2 cup crushed buttery crackers
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons melted butter
  • 1 tablespoon chopped parsley optional

Instructions
 

Step 1: Preheat the oven

  • Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish.

Step 2: Cook the bacon

  • Add the chopped bacon to a large skillet over medium heat. Cook until crispy, about 7 to 9 minutes. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate.

Step 3: Cook the onion and garlic

  • Leave about 1 tablespoon of bacon grease in the skillet. Add the diced onion and cook for 3 to 4 minutes, until softened. Stir in the garlic and cook for 30 seconds.

Step 4: Soften the cabbage

  • Add the chopped cabbage to the skillet. Cook for 8 to 10 minutes, stirring often, until the cabbage starts to soften. It does not need to be fully cooked because it will finish in the oven.

Step 5: Mix the creamy sauce

  • In a large bowl, stir together the sour cream, mayonnaise, 1 cup cheddar cheese, salt, black pepper, paprika, and thyme if using.

Step 6: Combine everything

  • Add the cooked cabbage mixture and most of the bacon to the bowl. Save a little bacon for the top. Stir until the cabbage is evenly coated.

Step 7: Add to the baking dish

  • Spread the cabbage mixture evenly into the prepared baking dish.

Step 8: Make the topping

  • In a small bowl, mix the crushed crackers, 1/2 cup cheddar cheese, and melted butter. Sprinkle this mixture over the casserole. Add the reserved bacon on top.

Step 9: Bake the casserole

  • Bake uncovered for 25 to 30 minutes, until the casserole is hot and the topping is golden.

Step 10: Rest and serve

  • Let the casserole rest for 5 minutes before serving. Sprinkle with parsley if you like.
