Ingredients
  

For the Skillet

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion diced
  • 3 garlic cloves minced
  • 1 small head green cabbage chopped, about 6 cups
  • 1 can diced tomatoes 14.5 ounces, with juices
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1/2 cup low-sodium beef broth or water

For Topping

  • Chopped fresh parsley optional
  • Shredded cheddar cheese optional
  • Sour cream optional

Instructions
 

Step 1: Brown the beef

  • Heat olive oil in a large deep skillet over medium-high heat. Add the ground beef and cook for 5 to 7 minutes, breaking it apart with a spoon, until browned.

Step 2: Drain if needed

  • If there is a lot of grease in the skillet, carefully drain most of it. Leave a little behind for flavor.

Step 3: Add onion and garlic

  • Add the diced onion and cook for 2 to 3 minutes, until it starts to soften. Stir in the garlic and cook for about 30 seconds.

Step 4: Add tomato and seasonings

  • Stir in the diced tomatoes, tomato paste, paprika, Italian seasoning, salt, black pepper, and red pepper flakes if using.

Step 5: Add the cabbage

  • Add the chopped cabbage to the skillet. Pour in the beef broth or water. Stir well so the cabbage starts to mix with the beef and tomato sauce.

Step 6: Simmer until tender

  • Cover the skillet and reduce the heat to medium-low. Cook for 12 to 15 minutes, stirring a few times, until the cabbage is tender.

Step 7: Finish and serve

  • Taste and adjust the salt and pepper if needed. Serve warm with parsley, cheese, or sour cream if you like.
