Ingredients
  

For the Tarts

  • 1 sheet frozen puff pastry thawed
  • 4 ounces cream cheese softened
  • 3 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 tablespoon granulated sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest optional
  • 1 teaspoon cornstarch
  • 1 large egg
  • 1 tablespoon water

  • Powdered sugar optional
  • Honey or maple syrup optional
  • Whipped cream optional

Instructions
 

Step 1: Preheat the oven

  • Preheat your oven to 400°F. Line a baking sheet with parchment paper.

Step 2: Prepare the puff pastry

  • Unfold the thawed puff pastry on a lightly floured surface. Gently roll it out just enough to smooth the creases. Cut it into 6 equal rectangles.

Step 3: Score the edges

  • Place the pastry rectangles on the prepared baking sheet. Use a knife to lightly score a border about 1/2 inch from the edge of each piece. Do not cut all the way through.

Step 4: Make the cream cheese layer

  • In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.

Step 5: Prepare the blueberries

  • In another bowl, stir together the blueberries, granulated sugar, lemon juice, lemon zest if using, and cornstarch.

Step 6: Fill the tarts

  • Spread a spoonful of the cream cheese mixture inside the border of each pastry. Top with the blueberry mixture, keeping most of the filling in the center.

Step 7: Brush the edges

  • Whisk the egg with 1 tablespoon water. Brush the pastry edges with the egg wash so they bake up shiny and golden.

Step 8: Bake the tarts

  • Bake for 16 to 20 minutes, or until the pastry is puffed and golden brown.

Step 9: Cool and serve

  • Let the tarts cool for 5 to 10 minutes before serving. Dust with powdered sugar or drizzle with honey if you like.
