For the Black Beans And Rice With Sausage
- 12 ounces smoked sausage andouille, or kielbasa, sliced into rounds
- 1 tablespoon olive oil
- 1 small yellow onion diced
- 1 green bell pepper diced
- 1 celery stalk diced
- 3 garlic cloves minced
- 1 1/2 cups long-grain white rice rinsed and drained
- 2 cups low-sodium chicken broth
- 1 cup water
- 1 can black beans 15 ounces, drained and rinsed
- 1 can diced tomatoes 14.5 ounces, drained
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt plus more to taste
- 1/4 teaspoon black pepper
- 1/8 teaspoon cayenne pepper optional
- 1 tablespoon fresh lime juice
- 2 tablespoons chopped fresh parsley or cilantro optional
Step 1: Brown the sausage
Heat the olive oil in a large deep skillet or Dutch oven over medium heat. Add the sliced sausage and cook for 4 to 5 minutes, stirring occasionally, until lightly browned on both sides.
Transfer the sausage to a plate and set it aside.
