  • 12 ounces smoked sausage andouille, or kielbasa, sliced into rounds
  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 1 green bell pepper diced
  • 1 celery stalk diced
  • 3 garlic cloves minced
  • 1 1/2 cups long-grain white rice rinsed and drained
  • 2 cups low-sodium chicken broth
  • 1 cup water
  • 1 can black beans 15 ounces, drained and rinsed
  • 1 can diced tomatoes 14.5 ounces, drained
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper optional
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh parsley or cilantro optional

Instructions
 

Step 1: Brown the sausage

  • Heat the olive oil in a large deep skillet or Dutch oven over medium heat. Add the sliced sausage and cook for 4 to 5 minutes, stirring occasionally, until lightly browned on both sides.
  • Transfer the sausage to a plate and set it aside.

Step 2: Cook the vegetables

  • In the same pan, add the onion, bell pepper, and celery. Cook for 4 to 5 minutes, stirring often, until the vegetables start to soften.
  • Add the garlic and cook for about 30 seconds, just until fragrant.

Step 3: Toast the rice

  • Add the rinsed and drained rice to the pan. Stir it with the vegetables for 1 to 2 minutes. This helps the rice pick up more flavor before it simmers.

Step 4: Add the liquid and seasonings

  • Pour in the chicken broth and water. Add the drained diced tomatoes, chili powder, smoked paprika, cumin, oregano, salt, black pepper, and cayenne if using.
  • Stir well and bring the mixture to a gentle boil.

Step 5: Simmer the rice

  • Once it starts to boil, reduce the heat to low. Cover the pan with a lid and simmer for 18 to 20 minutes, or until the rice is tender and most of the liquid is absorbed.
  • Try not to lift the lid too often while the rice cooks.

Step 6: Add beans and sausage

  • Stir in the black beans and browned sausage. Cover again and cook on low for another 5 minutes, until everything is heated through.

Step 7: Finish and serve

  • Turn off the heat and let the pan sit covered for 5 minutes. Fluff the rice with a fork, then stir in the lime juice.
  • Taste and add more salt if needed. Sprinkle with parsley or cilantro before serving.
