  • 1/4 teaspoon black pepper
  • 1 egg beaten

Instructions
 

Step 1: Prepare the Oven and Pan

  • Preheat the oven to 400°F.
  • Line a baking sheet with parchment paper. This keeps the pastry from sticking and makes cleanup easier.

Step 2: Prepare the Puff Pastry

  • Place the thawed puff pastry on the prepared baking sheet.
  • If needed, gently roll it out just enough to smooth the folds. Use a knife to lightly score a 1/2-inch border around the edges. Do not cut all the way through.
  • Prick the center of the pastry several times with a fork. This helps the middle stay flatter while the edges puff up.

Step 3: Make the Goat Cheese Spread

  • In a small bowl, mix the goat cheese, cream cheese or sour cream, lemon zest, lemon juice, garlic powder, salt, and black pepper.
  • Stir until smooth enough to spread.

Step 4: Add the Filling

  • Spread the goat cheese mixture over the center of the puff pastry, staying inside the scored border.
  • Arrange the asparagus spears over the cheese. You can line them up neatly or place them in a simple pattern.
  • Drizzle the asparagus with olive oil. Sprinkle with Parmesan cheese if using.

Step 5: Brush the Edges

  • Brush the pastry border with the beaten egg.
  • This helps the edges turn golden and shiny as they bake.

Step 6: Bake the Tart

  • Bake for 20 to 24 minutes, or until the pastry is puffed and golden brown and the asparagus is tender.
  • Let the tart cool for 5 minutes before slicing.

Step 7: Finish and Serve

  • Add extra lemon zest, fresh herbs, or a light drizzle of honey if you like.
  • Slice into 6 pieces and serve warm or at room temperature.
