  • 2 cups finely diced Vidalia onion
  • 1 cup mayonnaise
  • 2 cups freshly shredded Swiss cheese divided

Instructions
 

Step 1: Preheat the Oven

  • Preheat the oven to 350°F.
  • Lightly coat a 1-quart baking dish or 9-inch pie plate with nonstick cooking spray.

Step 2: Prepare the Onion

  • Peel the Vidalia onion and cut it into small pieces.
  • Measure 2 cups of diced onion. Finely chopped onion cooks more evenly and makes the finished dip easier to scoop.

Step 3: Shred the Cheese

  • Shred the Swiss cheese from a block.
  • Set aside about 1/2 cup for the topping. Freshly shredded cheese usually melts more smoothly than packaged shredded cheese.

Step 4: Combine the Ingredients

  • Add the diced onion, mayonnaise, and remaining 1 1/2 cups of Swiss cheese to a large mixing bowl.
  • Stir until the onion is evenly coated and the cheese is well distributed.

Step 5: Transfer to the Baking Dish

  • Spoon the mixture into the prepared baking dish.
  • Spread it into an even layer, making sure the thickness is similar from the center to the edges.

Step 6: Add the Cheese Topping

  • Sprinkle the reserved 1/2 cup of Swiss cheese evenly over the top.
  • This layer will melt and become lightly golden during baking.

Step 7: Bake the Dip

  • Place the baking dish in the preheated oven.
  • Bake uncovered for 30 to 35 minutes, or until the edges are bubbling and the onions are tender.

Step 8: Brown the Top if Needed

  • If the cheese is melted but not browned, turn on the broiler for 1 to 2 minutes.
  • Watch the dip closely because the top can darken quickly.

Step 9: Let the Dip Rest

  • Remove the dip from the oven and let it rest for 5 to 10 minutes.
  • The dip will be extremely hot and slightly loose when it first comes out. Resting allows it to thicken and makes it easier to serve.

Step 10: Serve
